Nettle cheese is a Dutch specialty: the tops of nettles are used in this traditional herb cheese. The nettles give the cheese a fresh edge. The nettle cheese is not only a great sandwich filling, it can also be used in a nice salad or a creamy soup. Usually a nettle cheese is a slightly mature cheese, but of course newer or more mature nettle cheeses exist as well. Nettle cheese is matured naturally for 8 - 10 weeks.
