The Roquefort is prepared from raw sheep's milk and aged in the natural cave of Combalou with penicillium Roqueforti. Roquefort has been carrying the AOP quality mark since 1925. The dairy is crumbly and soft with striking veins of blue mold, which give a sharp taste. The outside is edible and slightly salty in taste.
