Young cheese is a sort of cheese that has not had a lot of time to mature: it is very ‘young’. The maturing period is part of the process creating cheese, and new cheese only lays in a warehouse for a few weeks, no more than four. Compared to more mature cheeses this is a very short period, for example fully mature cheese has been left alone for more than ten months before it is served. Young cheese is softer than more mature cheeses. Young Gouda cheese nice and soft with a smooth taste. The Young Gouda cheese is an extra quality cheese with less salt, matured naturally for 4 weeks.

However, when a cheese is labelled 'Gouda Holland', this is the original Dutch Gouda cheese. Of course, this is also the cheese we sell in our shop. We have Gouda cheese on offer of different maturation, ranging from young cheese (matured 4 weeks) to very old cheese (aged 3 or 4 years).

I had not realised that I had ordered quite such a large cheese! But it arrived very quickly exactly when you said it would arrive, and you looked after me very efficiently. I was very I impressed to receive it with special paper to wrap the pieces once I had cut it for all members of my family. I also ordered the special"chopper" which made cutting it very easy. I had a tasting tonight with some of my grandchildren and they thought it really good. Tomorrow is the night when all the family is given their wedge, and I am quite certain that they will all very much appreciate the delicious young cheese. Somehow it has a very delicate soft taste. I am very grateful to you for your very efficient way of dealing with my request.
