Tête de Moine cheese
The Tête de Moine is a semi-hard, dark yellow cheese made of unpasteurised cow’s milk. Its fat percentage is 51+ and the flavor combines very wel with several wines. One whole cheese - cylindrical of shape - weights about 850 gram and has a yellow ribbed brown crust. Invented by monks in Swiss more than eight centuries ago it now has a reputation of being a delicate cheese for connoisseurs.
