Description Twente Bunkerblos

Twentse Bunkerblos is one of the best protected cheeses in the Netherlands. Hidden deep under a thick layer of earth in the Twente forests are eight old bunkers, where this special cheese is matured in a perfectly controlled climate. Once built as storage spaces, these bunkers now provide an unparalleled maturing environment where the constant temperature and high humidity give the cheese its characteristic flavour.

Twentse Bunker cheese

During 16 weeks of maturation, the crust of Twentse Bunkerblos is regularly washed and brushed with a unique mix of yeasts, molds and maturation cultures. This natural ripening process not only results in a robust flavour, but also gives the cheese its striking reddish/orange colour – a visual and flavoursome characteristic of this special cheese.

Twentse Bunkerblos is made from the extra creamy milk of Montbéliarde cows, which gives the cheese a refined nutty aroma and a pleasantly spicy aftertaste. The milk is vegetarian rennet, making the cheese suitable for vegetarians. The natural colour development is created entirely by the maturation process, without the addition of artificial colourings.

Traditional maturation with an eye for sustainability
The thick concrete walls and one and a half metres of earth around the bunkers provide natural insulation, meaning that hardly any energy is needed to maintain the ideal maturation conditions. The cheeses are turned by hand every week by cheese masters, who closely monitor the process to ensure optimal flavour development.

In addition to the artisanal ripening, Twentse Bunkerblos also has a robust appearance. Instead of a standard label, the cheese logo is printed directly on the top and side, adding a robust and authentic character to this special cheese.
