Which material suits cheese fondue
- Ceramic or stoneware: the classic Swiss caquelon. Spreads the heat evenly and keeps the cheese at temperature for a long time. Only for cheese and chocolate, not for hot oil. Emile Henry and Boska make fine examples.
- Cast iron: heavy, robust and very well suited to cheese fondue. Can go on the hob to melt the cheese, then onto the stand. Le Creuset and Staub are known for their enamelled cast-iron sets.
- Stainless steel: light and easy to clean, also suitable for meat fondue in oil or stock. For cheese fondue choose a thick sandwich base, otherwise the cheese catches.
- Electric: no fuel paste needed and the temperature can be set precisely. Handy for anyone who eats fondue regularly or prefers no open flame on the table.
Which size
For two people a 1 litre caquelon is enough. For four to six people 1.5 to 2 litres, for larger groups 2.5 litres or more. Count on 200 grams of cheese per person; the pot should leave room to stir without spilling.
Burner and fuel
Most sets use a burner for fuel paste or gel. Fuel paste burns quietly and without smell; one tin lasts about one and a half to two hours. Sets with a spirit burner exist too, but spirit gives more heat and needs more attention. Single burners, fuel paste and forks are in the fondue accessories.
Care
Soak cheese residue in warm water with a little washing-up liquid, then clean with a soft sponge. No steel wool on enamel or ceramic. Dry cast iron well to prevent rust. Most ceramic pots by Emile Henry and Boska are dishwasher safe; for cast iron and hand-painted stoneware the packaging says.
