Perhaps the most special maturing location in the Netherlands is in Daarle, Twente. The complex, where nowadays the ripening rooms of the Bunker cheese are hidden, used to serve as ammunition storage. This location was discovered by Jan-Peter Nijenhuis, who discovered that the perfect maturing conditions were to be found in these former ammunition bunkers. Under a layer of soil and concrete, where the humidity is constant thanks to the excellent insulation, while it is always 15 degrees Celsius. As a result, the cheeses also ripen sustainably. The unique character of the Twentse Bunkergoat’s cheese is once again emphasized by the striking appearance. The logo is printed in the side and top of the cheese.
