Description Vlielander Bunker Blue (bio)

Vlielander Bunker Blauw is the result of years of refinement and experimentation with recipes and ripening techniques. This special organic blue cheese is made with a secret combination of lactic acid bacteria and molds, carefully added to pasteurized milk. The cheese is prepared with real rennet and then transferred to a specially sealed part of the bunker.

During the ripening process, the cheese is naturally coated with blue mold. As soon as the molding process starts, the cheese is pierced with stainless steel pins to develop the characteristic blue mold structure. The constant temperature and high humidity in the bunker ensure that the cheese matures slowly for at least six weeks, resulting in a soft, creamy texture and a balanced blue cheese flavour.

This cheese has a natural rind and is produced completely organically without artificial additives or preservatives. The combination of artisanal preparation and natural ripening makes this cheese a true delicacy for lovers of mild blue cheeses.
