The A2A2 young matured has a total maturing time of approximately 1.5-3 months. The ripening process of this cheese takes place under special circumstances, to ensure that the cheese can reach its optimum taste during this time. Many a cheese lover buys the A2A2 young matured organic cheese for the taste, and not so much because it is organic. Moreover, it is also the solution for people with a cow's milk allergy, since this cheese contains milk from cows with the A2 gene.

The origin of the A2A2 young matured cheese can be found at Biokaas Kinderdijk. This is a completely organic farm and cheese factory on the Molenkade in Alblasserdam, South Holland. The Family van den Haspel started a cattle farm at the current location decades ago. In addition, the family also made artisan cheese here. In the early 1980s Andre van Houwelingen became an employee of the family. He too was fascinated by the transformation of milk into cheese. Nowadays, he still makes the most delicious cheeses, including the A2A2 young matured, with great passion.
