Ingredients of Aged Gouda Cheese

Ingredients:
Fat 48+, pasteurized cow's milk, rennet, salt, starter culture.

The rich, robust taste of aged Gouda cheese

In the classic cheese family, aged Gouda occupies a true place of honor. After the younger and matured variants, this cheese is given no less than 10 to 12 months to mature peacefully on traditional wooden boards. This long process ensures that the moisture in the cheese largely evaporates. This creates a robust, firm structure with an extra piquant and intense taste, which is beautifully balanced by the rich presence of crunchy salt crystals (also called protein crystals).

Although aged Gouda has a firm structure, our variant is still excellent for slicing or shaving. This makes it not only the perfect candidate for a luxurious sandwich or a classic grilled cheese, but also the absolute star on any cheese board. Serve a cube of aged cheese with a good dollop of coarse mustard or a sweet fig dip, accompanied by a nice glass of full-bodied red wine or an aged port, and you create a taste sensation that your guests will not soon forget.

With 1 kilo of Aged Gouda Cheese the whole family is stocked up again. Need more or less? See all weights of Aged Gouda Cheese.

Freshly cut, vacuum-packed and shipped cooled

Your 1 kg piece is cut fresh only after you order, and vacuum-packed straight away. The cheese is then shipped cooled to your door. Keep the cheese in the fridge and take it out about half an hour before serving to get the most flavour.

Frequently Asked Questions about Aged Gouda

When can a cheese be called 'aged Gouda'?

A Gouda cheese may bear the title 'aged Gouda' (or 'Oude Kaas' in Dutch) when it has reached a maturation time of 10 to 12 months. During these months, a lot of moisture evaporates, resulting in the well-known firm structure, the extra piquant taste, and the formation of the beloved salt crystals.

Are the white spots in aged Gouda mold?

No, certainly not! The white spots in the cheese are natural protein crystals (also often called salt crystals) that arise during the long maturation process. They are the sign of a high-quality aged cheese and provide that delicious 'crunch' in your mouth.

Is aged Gouda easy to cut or slice?

Yes, although aged Gouda is firmer than young or matured cheese, our 10 to 12 months aged variant is still surprisingly sliceable. For the best result, we recommend using a sturdy cheese knife or a special cheese slicer for hard cheeses. Also, take the cheese out of the fridge a while before use; it is easier to cut at room temperature.

How long can I keep the aged Gouda?

Thanks to the lower moisture content, aged Gouda can be stored excellently. Unopened in our vacuum packaging, it will stay perfect in the refrigerator for about 8 weeks. After opening, it is best wrapped in cheese paper; you can then safely keep the cheese in the vegetable drawer for 3 to 4 weeks.

Are there cheeses that are even older?

Certainly! For the real lovers of extreme piquancy and crumbliness, we also have 'Vintage Gouda' or 'Crumbly cheese' (aged 1 to even 4 years). Feel free to view our entire cheese assortment to discover the age that perfectly suits your taste.
