Description Alta Badia
Alta Badia is a flavorful, firm Italian mountain cheese made from pasteurized cow's milk sourced from a small number of selected dairy farms in the Alps. After an aging period of approximately 180 days, the cheese develops a light brown rind and a firm texture. This Italian mountain cheese boasts a complex taste with savory, nutty aromas and a rustic appearance.
The name "Alta Badia" is derived from a small village in the Dolomites, where the local language is Ladin. The cheese has a firm, dry rind and a straw-colored interior without holes. The consistency on the palate is short and firm, yet smooth and melting. The taste is intense and complex, with notes of milk, roasted nuts, and potatoes.
This cheese has one of the longest aging processes among the Mila cheese varieties and is ideal for various culinary applications. Thanks to its excellent melting properties, Alta Badia is a great alternative to raclette cheese.
