The Old Beemster cheese is the cheese that has matured the longest of all regular cheeses from the Beemster. The basis lies in the North Holland Beemster polder, where the cows graze on nutritious, slightly salty meadows. This old variant matures peacefully for a whopping 10 to 12 months in the traditional cheese warehouse. Due to this long maturation, a lot of moisture evaporates, making this the darkest and firmest Beemster cheese.

The long maturation process ensures an unprecedentedly powerful and piquant flavor. In addition, the cheese has had plenty of time to form the famous white salt crystals (protein crystals). These crystals perfectly accentuate the slightly salty basic taste of the Beemster polder and provide a fantastic 'crunch' with every bite. Besides the great taste, this cheese is completely curdled with microbial rennet, making it 100% suitable for vegetarians.
