The secret of the Kaltbach sandstone caves

The Kaltbach Emmentaler AOP is not just any cheese with holes; it is a piece of Swiss heritage. The cheese is traditionally prepared from fresh, unpasteurized cow's milk (raw milk). After the initial ripening, only the very best cheese wheels are selected to continue their journey in the famous Kaltbach sandstone caves in the Swiss canton of Lucerne. This miles-long cave system has a constant temperature of 12.5 degrees Celsius and a high humidity of 94%. This is the perfect, natural climate for cheese ripening.

During the ripening process in the caves (at least 12 months), the cheese is cared for by hand. This allows the Emmentaler to develop its characteristic, rustic dark brown to black rind. Inside the cheese, the famous large holes (eyes) emerge, and an extremely flavorful, golden yellow dairy forms. The taste is complex: intense, aromatic, full, and wonderfully nutty. Perfect for a luxurious cheese board, as a base for a premium cheese fondue, or simply shaved onto a robust piece of bread.
