The origin of the Danish Port Salut
The Esrom cheese is one of the most famous cheeses from Denmark and has a history dating back to the twelfth century in the Esrom Abbey. It is often compared to the French Port Salut, but Esrom definitely has its own character. During the ripening process, the cheese is regularly washed with a special bacterial culture, the so-called red smear bacteria. This provides the recognizable orange-yellow rind and the unmistakable, strong smell.
Do not be put off by the intense smell though! The taste of the dairy on the inside is surprisingly mild, sweet and slightly buttery. The cheese has a supple, semi-soft texture with small, irregular holes. Because of the lower fat content of 35+, the cheese is also a bit leaner than most standard cheeses. Esrom melts truly fantastically and is therefore perfect for hot dishes or a grilled cheese sandwich, but is also delicious on rye bread or as a tasty addition to a cheese board.
