The inside of the Hooibloem cheese is slightly straw-colored with a strong texture. The outside of the cheese, the skin, is a mixture of dark green and brown. This is also equipped with small pieces of hay. The cheese is creamy, soft and delicate. Here you can taste notes of sweet, raw almonds, creamy tones and a subtle caramel taste. Moreover, the scent of floral aromas and honey is reminiscent of an alpine pasture.

Description Hayflower cheese

The inside of the Hooibloem cheese is slightly straw-colored with a strong texture. The outside of the cheese, the skin, is a mixture of dark green and brown. This is also equipped with small pieces of hay. The cheese is creamy, soft and delicate. Here you can taste notes of sweet, raw almonds, creamy tones and a subtle caramel taste. Origin

Hay flower cheese originates from Käserei Stofel, located in the town of Unterwasser in the northeastern part of St. Gallen in Switzerland. Here Thomas Stadelmann makes various cheeses and dairy products, including the Hay flower cheese. The cheese is named after the German word for hay flower: Heublumen. The cheese is coated in Heublumen. It is an expression of the more traditional Swiss Alpine-style cheese. Organic milk is used for production. After production, the cheeses are ripened for two months in a special ripening room. A dense layer of hay bales is then applied to the outer side. The cheeses are then ripened for another two months. This is how this delicious hay flower cheese is created.

Combination

This creamy, soft cheese is ideal for use in the kitchen due to its good melting quality. The cheese melts beautifully. This makes the Hay flower cheese ideal as a fondue cheese, but it is also a nice, tasteful addition to warm dishes. Also on a cheese board in combination with a glass of red wine, the Hay flower cheese tastes especially well.

This is a very different kind of cheese from Switzerland. It is fairly mild but very aromatic. I will definitely order it again.
