Our Hay Flower cheese (called 'Heublumen Käse' in German) is a wonderful expression of traditional Swiss Alpine cheese. This semi-hard cheese is produced with great passion in Unterwasser, Switzerland, from high-quality organic milk. After production, the cheese first matures for two months in a special ripening room. What follows is a unique process: the outside of the cheese is generously covered with a dense layer of hay, spices and flowers, such as sunflower, cornflower and rose. After this, the cheese matures for another two months, so that the floral and earthy aromas can penetrate deep into the dairy.

The result is a feast for the eyes and the taste buds. The inside is pale straw-colored with a wonderfully smooth, creamy texture. The taste is remarkably soft and delicate, offering subtle notes of honey, light caramel and sweet, raw almonds. The scent of the floral rind takes you straight to a blooming Alpine meadow. This cheese will undoubtedly steal the show on a cheese board in combination with a glass of red wine. But did you know that this cheese also has sublime melting properties? This also makes the Hay Flower cheese a fantastic addition to a cheese fondue, sandwich or warm casserole!

This is a very different kind of cheese from Switzerland. It is fairly mild but very aromatic. I will definitely order it again.
