Ingredients of Manchego PDO

Ingredients:
Fat 50+, pasteurized sheep's milk, salt, stabilizer: calcium chloride, lactic acid ferments, coagulant (chymosin produced by submerged fermentation on a plant substrate), preservative: lysozyme (contains egg).

The beating heart of La Mancha

The Manchego PDO is without a doubt the most famous cheese in Spain. This cheese may only be produced in the vast, dry La Mancha region, south of Madrid. The strict PDO (Protected Designation of Origin) quality mark guarantees that the cheese is exclusively made from the whole milk of the Manchega sheep. These hardy sheep graze all year round on the sparsely vegetated Spanish plains, which results in an exceptionally rich, concentrated and flavorful milk.

A characteristic of the Manchego is its special rind. It features a pressed-in zigzag pattern, which traditionally results from the use of baskets woven from esparto grass. The cheese itself has a firm, compact structure that melts beautifully on the tongue. The taste is mild, savory and buttery with a delicate nutty aftertaste. Manchego is an absolute must for tapas lovers. Combine this cheese with membrillo (quince jelly), green olives, Serrano ham and a good glass of Spanish Tempranillo or a dry sherry for the ultimate taste experience.

Freshly cut from the knife for optimal quality

At GoudaCheeseShop.com we treat this Spanish delicacy with the greatest care. We only cut your piece of Manchego fresh from the large cheese wheel the moment you place your order. Immediately after cutting, the cheese is packed tightly and completely airtight in a vacuum. To protect the firm structure and the refined aromas during transport, we always ship your order with a cooling pack as standard. This way you are assured of fresh top quality at home.

Frequently Asked Questions about Manchego PDO

Can I eat the rind of the Manchego?

No, the recognizable rind with the zigzag pattern is not intended for consumption and is best cut away before you serve the cheese.

Is this cheese made from raw milk?

No, this Manchego PDO is made from pasteurized sheep's milk. The milk has been heated to kill unwanted bacteria, making the cheese completely safe to eat, even for pregnant women.

What exactly does the PDO quality mark mean?

PDO stands for Protected Designation of Origin (DOP in Spanish). This European quality mark protects regional products. It guarantees that the Manchego is authentic, made in La Mancha, and meets strict traditional production requirements.
