During preparation, the cheesemakers add a special bacterial culture (propionic acid bacteria). While ripening in the warehouse, these bacteria produce small amounts of carbon dioxide gas. This gas cannot escape from the cheese, causing large air bubbles (holes or 'eyes') to slowly form.
