The Mordicus beer cheese is artisanal old cheese with added Mordicus beer. This is a rich, dark beer that is brewed in the Stadsbrouwerij (city brewery) in Wageningen. The addition of this beer to the cheese gives it its unique, fruity flavor, which is perfect for a tapas or cheese platter.
For the production of this beer-flavored cheese they use thermized milk from the Montbéliarde race of Dutch farmer Henk. These cows graze outside as much as possible, as well during the day as at night. The curd that is processed in the cheese is ripened in Mordicus beer. This gives it it’s authentic flavor, and results in a very tasty, natural crust that you can actually eat!
The cheese is pickled relatively short, namely 6 hours instead of the usual 48. However, since it’s ripened fairly long (4-6 months) its texture is quite hard and the taste is spicy. Besides, no artificial colorings, flavorings and conservatives were added to this cheese. The production process is completely artisanal, which makes it a very pure cheese, except with a hint of beer! Are you a true beer lover, but also a big fan of cheese?
