Nylander Bunker Blue is an organic blue cheese, made from unpasteurized Jersey cow's milk. Thanks to the unique maturing process in a bunker, this cheese develops a mild and creamy blue cheese flavor with a characterful texture.

Nylander Bunker Blauw is the result of a special collaboration between the Vlielander Kaasbunker and organic cheese farm De Nylander from It Heideskip. The milk for this cheese comes from Jersey cows, known for their high fat and protein content, which ensures a rich and full flavour. Immediately after milking, the unpasteurised, still warm milk is processed in the cheese tub with a secret mix of lactic acid bacteria and moulds.
Cheesemaker Nils Koster transforms this high-quality milk at De Nylander into a unique blue-veined cheese. After production, the cheeses are transferred to a specially sealed part of the bunker, where they mature under optimal conditions. During the maturing process, the cheeses are pricked with stainless steel pins to stimulate the formation of blue mould. After at least four weeks of maturing, a young cheese with a soft texture and a mild blue mould flavour is created.
