Description Provolone Caciocavallo
Provolone Caciocavallo is an Italian cheese made from cow's milk. This is also called a scalded cheese, because by kneading the curd there are layers in the structure of the cheese, whereby the scalding refers to hot water that is added at the start of kneading process. The cheese is then formed into a recognizable cone or mandarin shape of approximately 40 centimetres. Two versions of Provolone are known.
