Rochebaron is a mild blue cheese from Beauzac, France, where the cheese is produced industrially. It is one of the few blue cheeses that slightly ripens when ripe. The cheese is characterized by a gray rind, which is created by a layer of pure ash. This rind is edible and makes the cheese less acidic. Rochebaron was already made in the Middle Ages, although the recipe has been adapted over time. Rochebaron is a delicious dessert cheese, but can also be used in dishes.
