Derby cheese is a well-known cheese from England and Sage Derby is a variation on this, that is recognizable by the green veins which are abundantly present in the cheese. It is a semi-hard cheese, which is mild in flavour and to which the sage is added. This gives the cheese a subtle and spicy undertone. The sage is early on processed in the cheese, even before it is compressed. After this the cheese is matured for at least three months to get full flavour.
A festive cheese
Originally, the Sage Derby cheese in England was developed in the 17th century, where this cheese was mainly meant to be eaten during festive occasions such as celebrating the harvest and around Christmas.
