The cheese can be recognized by an existing odour, which even has a touch of ammonia that can be recognized. However, this does not affect the beautiful full flavour of this cheese. The special thing about this cheese is that the cream is largely separated from the milk, leaving skimmed milk that forms the basis of this cheese.

Tomme de Savoie is therefore a low-fat cheese, with fat percentages varying between 20% and 45%. It is a subtle cheese, with a refined flavour, that is caused by the diet of the cows which consists of summers grass and hay in the winter.
