Van Schier Monnikenwerk is a tribute to the monks who gave Schiermonnikoog its name and heritage. This natural rind cheese carries the rich tradition of monastery cheese, inspired by centuries-old Swiss cheese recipes. The cheese matures under ideal conditions with high humidity, which keeps the structure soft and creamy and the flavour full and spicy.

The full, unskimmed milk gives the cheese a robust and creamy character, while ripening ferments and microbial rennet ensure an intense and nutty aroma. The ripening requires patience and craftsmanship – a monastic task in itself – which results in an authentic cheese with depth and finesse.

Van Schier Monnikenwerk is not only an ode to tradition, but also to sustainability. The milk comes Van Schiermonnikoog farmers who have consciously reduced their livestock by 40% to reduce nitrogen emissions and promote biodiversity. This contributes to a more natural landscape where meadow birds and plants can develop.

Through a collaboration with the Dutch Bird Protection, this cheese not only contributes to more sustainable food production, but also to the conservation of nature. The polders are enriched with wetlands, which attract birds such as the black-tailed godwit, lapwing and redshank and improve soil fertility.
