The Westmalle Trappist Cheese is a rare delicacy with a special story. The monks of the Westmalle Abbey have been making this cheese since the nineteenth century. What makes this cheese extra unique is that it is still entirely produced within the abbey walls. The monks use the fresh, thermised milk from their own herd of Blaarkop cows for this. Because the cows graze outside in the spring and summer, the color and taste of the cheese vary subtly with the seasons.

This Trappist cheese is a wonderfully smooth, semi-hard cheese. The ripening process takes place in a completely natural way, without the addition of artificial colors or flavors. Furthermore, the cheese contains surprisingly little salt (only 1 percent), which creates a remarkably mild, creamy, and slightly sweet flavor. Not usually a fan of soft cheese. This is semi-soft and a bit too delicate for my likeing, but has a lasting set of aromatic flavours hidden somewhere.

I tried this cheese during my holidays in Belgium and I really appreciated it, that's why I ordered it and it was really as good as the one I tasted in Bruxelles: I was delighted! It has a buttery and delicate flavour, it pairs perfectly with a Trappist beer.
