Description Weydeland Flinck
The Weydeland Flinck lives up to its name: it is a substantial, robust cheese specially developed for lovers of depth. It ripens for no less than 10 months on the wooden shelves of the CONO warehouse. Where many cheeses become very salty and sharp after such a long ripening, the Flinck distinguishes itself with a beautiful sweetness and notes of caramel. The combination of the very best North Holland meadow milk, the unique starter culture, and the abundant, crackling protein crystals creates an unparalleled taste sensation that is firm, but at the same time buttery soft on the tongue.

A Robust Eyecatcher
Due to the long maturation, the Weydeland Flinck has acquired a fantastic, firm structure. Break or cut it into chunky pieces to elevate the cheese board to an absolute top level. Serve with a sweet pear or fig chutney, some dark grapes, and robust nuts.
In the glass, the Flinck demands an equally strong counterpart. Pour a full-bodied, wood-aged red wine (such as a Shiraz or Malbec), a classic port, or a strong dark specialty beer. In addition, the Flinck can be fantastically grated over a carpaccio or casserole for a culinary, sweet-savory twist.

5 Frequently Asked Questions about Weydeland Flinck
What makes the Weydeland Flinck different from a regular Old cheese?
Although the Flinck ripens for 10 months, just as long as many old cheeses, it uses a special starter culture. As a result, in addition to the spicy, old taste, it develops a very specific, refined sweetness (caramel notes) that a regular old cheese does not have.
Where does the name 'Flinck' come from?
The name reflects the character of the cheese: robust, firm, and sturdy ('flink' in Dutch). It is a cheese with plenty of spice, plenty of crystals, and plenty of flavor!
Are there crystals in this cheese?
Yes, absolutely packed! During the 10-month ripening, the proteins crystallize, which creates the characteristic small white dots in the dairy. They give the cheese that delicious 'crunch'.
Is this special cheese lactose-free?
Yes. Just like our other long-ripened cheeses, the Flinck is 100% naturally lactose-free, because the milk sugars have been completely broken down during the 10-month ripening process.
Do you have more of these kinds of specialties?
