The Weydeland 48+ Old is the ultimate proof of artisanal patience. It takes no less than 52 weeks of ripening on traditional wooden boards before this cheese can bear the 'Old' stamp. Throughout that entire year, a large part of the moisture evaporates, strongly concentrating the flavors and making the cheese deliciously piquant and rich. You will find crunchy white salt and protein crystals throughout the dairy. Yet, you will notice that the special North Holland meadow milk has done its job: the cheese still melts away pleasantly soft and creamy on the tongue. A true delicacy for the connoisseur.

Can I easily slice this old cheese with a cheese slicer?
Because the cheese has ripened for a year, it has become quite hard and crumbly. We therefore advise cutting the cheese into cubes or breaking it with a sturdy cheese knife, rather than trying to slice it.
