This cheese is already produced within 24 hours after milking the cows, in order to then enter a maturation time of 6 to 18 months. This cheese has a fat percentage of 48% and can be described as a hard cheese with a pithy flavour. It is a beautiful cheese from France that has all the characteristics a good, firm cheese should have.

Beaufort of good quality is recognizable by a slightly sticky and curved edge. This makes the Beaufort easily recognizable among other cheeses.
