The result is a firm texture, velvety mouth-feel, and complex flavor like no other. Made from 100% pasture milk which you definitely can taste out of it! Really!

Beemster cheese gets its name from Holland’s oldest polder the Beemster. Various species of grass grow in this area of reclaimed land and they give Beemster cheese a specific taste. The cheese is avaiVegetarisches Lab (mikrobiell)le in four different kinds, namely; young matured, matured, extra matured and old. All Beemster cheeses have a distinctive salty and creamy touch to their flavour. Traditionally, the cheese is used particularly as a sandwich topping, but it is just as enjoyable as a snack.

I expected more crunchy protein crystals in this than I’m getting. Buying the same “Beemster Classic” at a local grocery store (at $23/pound!) results in a very different cheese than I received. I’m certain I got the correct cheese, which makes me think that perhaps the cheese I’ve gotten locally is older by several months at least than the 18 months it states, or perhaps is a different cheese than I thought. Looking up my purchase history, it is listed as “Beemster Aged, firm and bold” instead of “Beemster Classic”. Hmm. Anyway, this is great cheese and I’m really glad to have gotten it. Shipping was super quick and it was delivered within days of me ordering, which was amazing. This wheel of cheese has now visited more countries than me!
