In order to call a cheese a fully matured farmers cheese it first of all has to be produced on a Dutch farm under very particular traditional circumstances, one of them being that the milk that is used has to be fresh instead of pasteurized. Furthermore the cheese has to lie in warehouse for ten to twelve months: it is a fully mature cheese.
