In the old water bunker on Vlieland’s highest dune, our organic cheeses slowly mature to perfection. Thanks to the bunker’s unique microclimate – high humidity and constant coolness – our cheeses have all the time they need to develop their rich, full flavors. Each cheese tells its own story of craftsmanship, patience, and passion.
Vlielander Bunker Cheeses are the result of traditional craftsmanship and a unique natural aging process. Underground, in a former water bunker, our organic cheeses age on untreated pinewood planks. The microclimate in the bunker is essential: the constant cool temperature and high humidity ensure a slow, natural ripening. Each cheese is carefully tended to by hand and turned daily to achieve the optimal taste and texture. We collaborate with renowned dairies like Kaaslust and De Nylander to process the finest organic milk.
